Oatmeal Coconut Pancake - 燕麦椰奶煎饼

A hearty breakfast makes it a perfect day to starts with and Pancake is definitely a classic breakfast option. Here we made Oatmeal Coconut Pancake using oatmeal flour and the new Ayam Brand Super Light Coconut Milk which contains only "5% Fat". On side I also prepared some berries fruit sauce with the leftover coconut milk and sweeten it honey to serve with the pancakes.

Selamat Hari Raya with Chocolate Cornflake Cups vs Oatmeal & Dates Cookies

Today, 28 July 2014 is a public holiday in Singapore where the Muslim celebrates Hari Raya Aidilfitri. Hari Raya literally means ‘celebration day’ whereas Hari Raya Aidilfitri is the day that marks the end of Ramadan in the Islamic holy month of dawn-to-sunset fasting. For us we are fortunate to have Malay neighbour who always share their lovely bakes and dishes with us and every year during Hari Raya we are also blessed with delicious treats too.

Oatmeal Fish Porridge

If you have being following this blog, you can find another similar Savory Oatmeal Porridge which I had shared the recipe a few years back. I still remember that recipe was taught to me by my ex-boss wife who always include it in their breakfast menu. And since we can easily purchase either Instant/Quick Cook Oatmeal from leading supermarkets and they both works well on Sweet (recipe) and Savory (recipe) dishes, hence oatmeal became one of my favourite pantry ingredients.


OATMEAL FISH PORRIDGE


This Oatmeal Fish Porridge can act as a great idea for weekend brunch or you can even serve it for dinner too. The idea of using fish slices is because I wanted to create something similar to Fish Congee but with more nourishing ingredients like carrot, wolfberries, gingko nuts and egg. But then it is still up to individual to mix and match with the ingredients that you prefer.


(Serves: 2  | Preparation: 5 minutes | Cooking: 15 minutes)

Ingredients:
1/2 Cup of Quick Cook Oatmeal (Quaker brand)
750ml Chicken Broth
150g Mackerel Fish Slices
1 Egg, lightly beaten
2 Stalks Spring Onion, cut into sections
Some Diced Carrot
Some Gingko Nuts
Some Wolfberries
Some Chopped Spring Onion

Method:-
1. Lightly marinate fish slices with salt, pepper and sesame oil, cornflour and set aside.

2. Preheat a saucepan with some oil, lightly fry the diced carrot and spring onion till fragrant, add in soup broth and gingko nut, simmer over low heat for about 10 minutes until carrot is soften.

3. Next add in quick cook oatmeal and continue to simmer till almost done (if the mixture is too thick, add extra 150 - 200ml of hot water/soup broth to dilute), add in fish slices and wolfberries.

4. When fish is cooked through, switch off the heat, drizzle beaten egg and give it a quick stir.

5. Ladle oatmeal into serving bowls, top with some chopped spring onion and fried shallot, serve immediately.


I guess for a change, this is not a bad idea for rice replacement as it look and taste somehow or rather similar to congee. And if you prefer more dilute version, add in either more chicken broth or reduce the amount of oatmeal. For me, I prefer a sticky texture if I am looking for some comfort food during cold weather.

Warm Mixed Fruits Breakfast Oats

  December school holiday has finally come to an end and tomorrow it will be a brand new school terms for most of the students. Furthermore I am sure for those parent(s) whom has a child that goes Primary 1 this year, these few days would be a challenging days for both the kid and parents. Take me as an example, I have being worrying for my boy 1st day of school since early December so I guess tomorrow would bound to be an excited and stressful day for both of us.

Since breakfast is a very important meal to start off for the day especially for young school kids. I would like to share with you one of my boy's favourite oatmeal dish that he usually takes in the morning.Perhaps this would add-on some ideas to your usual breakfast list especially in recent cozy rainy seasons too.

Research shows that Daily consumption of a bowl of oatmeal can lower blood cholesterol due to its soluble fiber content. So having a bowl of this quick and easy oatmeal with your desire toppings would be definitely a great choice to start off the day.

Ingredients: (Serve 2)
1/2 Cup Quaker Quickcook Oatmeal
1 1/2 Cups Fresh Milk
1/3 Cup Dried Mixed Fruits and Nuts
2 Tablespoons Honey

Method:
1. Place oatmeal and milk in a saucepan and cook over medium low heat.
2. When the mixture comes to boil, keep stirring on and off for 1 minute or until slightly thicken and creamy.
3. Turn off the heat. Rest cooked oatmeal porridge in the saucepan for another 3 minutes to achieve a more smooth and creamy texture.
4. Divide the oatmeal porridge between bowls and top with dried mixed fruits and nuts, drizzle with honey and serve warm.


VARIATION:

~ Banana Topping:
1. Place 2 tablespoons of honey and some chopped nuts in a small frying pan and cook it over medium heat for 1 minutes, stirring occasionally.
2. Add banana (1 large banana cut into sliced) in the honey mixture and toss well then serve the cooked oatmeal with banana toppings.

~ Mixed Berries Topping:
1. Place 1/2 cup frozen mixed berries(thawed) and 1 teaspoon brown sugar in a small bowl and mixed well then use it as topping.

Savory Oatmeal Porridge - 麥片粥

Oatmeal is usually used to make porridge or act as an one of the ingredient in oatmeal cookies or oat cakes. Sometime it is use as a topping on many oat bran breads. Research shows that Daily consumption of a bowl of oatmeal can lower blood cholesterol, due to its soluble fiber content.

This is my very 1st attempt in cooking Savoury Oatmeal which really worried me before the final end product being served. But to my surprised these really turn out well and it taste just as similar as to those "Cantonese Porridge - 广东粥" texture. To further enhance the fragrant of the porridge, I even prepared some pan-fried shredded ginger to use as garnish.

As for this recipe, I use this "Quaker - Quick Cook Oatmeal" which you can purchase in most supermarket. You can add your preference amount of Oatmeal to the thicken the porridge to the consistency that you want the it to be.

Ingredients: (Serves 2)
5 - 6 Tablespoons of Quick Cook Oatmeal
3 Imitation Crab Meat, diced
100g Of Mince Pork
1 Egg, lightly beaten
600ml of Water/Stock
Chopped Spring Onion & Coriander
Pan-fried Shredded Ginger, optional

Methods:
1. Marinate the mince meat with some light soy sauce, pepper and sesame oil and set aside.
2. Preheat a saucepan with some oil, lightly fry the diced crab meat until done, then add in the marinated mince meat.
3. Give it a quick stir until the meat are well separated and cook through.
4. Add in the water and bring it to almost boiling point then add in the quick cook oatmeal.
5. When the mixture come to boil again, low the heat and simmer for about 5 minutes then season to taste.
6. Switch off the heat, remove the pot from the stove, then drizzle in the beaten egg and give it a quick stir.
7. Serve in the bowl with extra topping of chopped coriander, spring onion and shredded ginger.

Notes:
a) To make the pan-fried shredded ginger:-
~ Preheat a small pan with about 1 tablespoon or more of oil, then add in 1 tablespoon of shredded ginger, saute it over medium low heat.
~ Stir consistency until the ginger turns almost golden in colour, switch off the heat, remove the shredded ginger and set aside in a small saucer.
~ Pour some of the oil over it so as to drizzle on the porridge or noodle.

At a glance of it, you will definitely mistaken it as the usual "Mince Pork Porridge" that we used to have in the Asian way of cooking. So do give this a try to serve Oatmeal in a new taste compare to the sweet flavour varieties that we used to have for breakfast.Posted by Picasa
